Chef Tony Joins the CIA’s Dream Team

In early June, Alltown Fresh Chef, Tony Cascino, was invited to participate in the Culinary Institute of America’s (CIA) Healthy Menus R&D Collaborative panel. This is a member-based initiative that advances the development of healthy menu solutions for restaurants and other high-volume foodservice operations by taking inspiration, information, and insights from other CIA health and wellness initiatives.

As a new member of the HMC, Tony was asked to present as part of a three-person panel Flavor Innovations and “healthy does not mean lack of flavor” with Owen Klein (VP, Menu & Culinary Innovation, CAVA), & Matthew Harding (VP, Culinary and Menu Innovation, Piada Street Food).

“Being noticed for what we have accomplished at AF / Global and asked to be a part of this national committee that touches so many keystones of what we discuss regularly is a testament to our ability to disrupt the industry,” said Tony. “I am personally excited and honored to be a part of it and that our team’s endeavors are noticed. I am also proud that we are far ahead of the curve.”
